Chicken and Dumplings |
| 1-3 to 4 lb. Hen 1/2 C. Celery, chopped 1 medium white onion, chopped 1 tsp. Salt 1 tsp. parsley flakes 1 tsp. natures season salt 3 C. Flour 1 tsp. Salt 2 eggs 1 tsp. Shortening 1 tsp. Baking Powder |
| After cleaning hen, cut into parts in deep heavy pot. Add celery, onions, salt, season salt, parsley flakes. Cover with water. Place lid and cook slowly 1-1/2 hours or until done. Dumplings: For dough mix flour, salt, eggs and baking powder. Add cold water as desired and blend well. Pour on floured board and work into a ball. Roll out 1/4 inch and cut into squares. Add as many as desired to cooked hen and let simmer for 12 to 15 minutes. More water may be added as needed. Serves 10. |
